Be My Valentine?!


Today is St. Valentine's Day.  While neither myself nor Ki are extremely into Valentine's Day, we both do enjoy things pink... and sometimes heart-shaped :).  Since it is the day for pink and heart-shaped things, we figured we would 'indulge' on a marvelously pink breakfast - complete with PINK coffee!  This is a amazingly easy breakfast which you could make any morning, not just on February 14th.


Heart-Shaped Chocolate Chip Pancakes 
makes one serving
1/2 cup fiber one pancake mix
1/3 cup water
1 T mini chocolate chips
a couple drops red food coloring

Mix together pancake mix, water, and food coloring.  You can be as creative as you want to be for the shapes - Ki freehanded the hearts and they turned out pretty good, but if you prefer to keep it simple and just make regular pancake shapes, they'll still be pink and festive and definitely delicious.  Top the backside of the batter with the chocolate chips before you flip them over in the pan.

Serve them with sugar-free pancake syrup, blood oranges (if you've never tried them - you have to, they have them at Trader Joe's if there is one around), and PINK coffee (recipe to follow).

PINK Cup o' Joe
1 oz sugar-free cherry coffee syrup
16 (or so) oz of coffee
a couple oz of milk (to your taste and color preference)

We picked up a bottle of cherry coffee syrup yesterday since our supply was running low - and were pleasantly surprised at how pink and delicious it made our morning coffee!
