Coffee Cake Muffins


Obviously, we started shoveling to try and dig our way out of the house (since school/work will not likely close again tomorrow - but here's to hoping!).  Certain snow drifts were up to the windows, making it quite difficult, as well as quite a lot of work.  We made it a quarter of the way down the driveway (it is fairly long), and were hungry and cold when we back in.  At the grocery store a few weeks back, we got the ingredients to make the following muffins, but never got around to actually baking them up.  Which ended up perfect as it was a great time for a mid-morning hot chocolate break!


Below is the recipe the way we made it (just changed a few things around as we did not have all of the ingredients called for).  We also halved it as we did not want a whole dozen laying around waiting to be eaten ;).


HG's Crazy Crumbly Super Yummy Coffee Cakes


For Cakes 
1 cups betty crocker french vanilla yellow cake mix
3 oz dannon greek yogurt (non-fat, this was a substitute to fat-free sour cream)
2 T  fat-free liquid egg beaters
2 T Torani Sugar Free Syrup, Brown Sugar Cinnamon
For Crumb Topping 
3/4 cups Fiber One bran cereal (original)
2 T fat-free liquid egg substitute
2 T no-sugar-added applesauce
1.5 T Splenda No Calorie Sweetener, granulated
1.5 t brown sugar (not packed)
1.5 t cinnamon 



Directions
Preheat oven to 350 degrees.

In a food processor or blender, grind Fiber One to a breadcrumb-like consistency. Transfer crumbs to a dish, and add all other topping ingredients. Stir well, until mixture is completely mixed and crumbly. Set aside.

Mix all cake ingredients together until thoroughly blended and free of lumps.

Put cupcake wrappers into 6 cups of a muffin pan. Evenly distribute batter among the cups. Bake for 10 minutes, and then remove pan from oven.

Using your fingers to help form the crumbs, evenly top each cake with crumb mixture, lightly pressing crumbs into cake tops so they stick. Return pan to the oven, and bake for 5 (to 10) minutes longer. Allow to cool before removing cakes from the pan. 


These were delicious!  Especially when paired with a cup of fat-free hot chocolate (with added french vanilla sugar-free syrup).  A perfect snack to help up warm up and energized to continue shoveling!
