A Twist on Sloppy Joes
Sloppy Joes are probably one of my most often consumed meals. They were a childhood staple, and I have continued to make them on occasion throughout the years because frankly, they are delicious. This recipe comes courtesy of Hungry Girl, herself, however we switched out the called-for ground turkey for ground boca crumbles, and used additional sauce to make it sloppier.
Sloppy Joe Slaw from Hungry Girl
makes 4 servings
1 bag (roughly 4 cups) broccoli slaw
2 2/3 cups (four 2/3 cup servings) boca ground crumbles
1 can sloppy joe sauce (I can't remember the brand we used, but it had between 25 and 30 calories per serving, but use your favorite brand/whatever you can find - just look at the label)
Place the broccoli slaw and boca crumbles in a large pan over medium heat and cook until the boca is warmed and the slaw is tender. Once the mixture is close to ready, add in the sauce and simmer until everything is heated through.
We topped ours with dill pickles, and served a thomas' light everything bagel thin along the side. This is such a delicious and easy meal, good for any day of the week!
