Not your Noodles & Co. Macaroni


My freshman year of college, I got a part time job at Noodles & Co.  A brand new location opened about 10 minutes away from school so I was able to be a part of a somewhat intensive four day training program since almost all of the employees were brand new and we obviously had no clue what we were doing.  One of the things on our itinerary was to try all of the dishes on the menu - tough job, right?


Because we were in the heart of Dairyland, the Wisconsin Mac & Cheese was one of the most popular items on the menu, albeit arguably the most unhealthy. Noodles has even gone so far as to offer 'grown-up' versions with additional toppings... It was kind of funny when I was calculating the calories on this dish that the entire recipe is roughly the calories in just one regular bowl of the Noodles version (the plain one, not the grown-up ones - I don't think I even want to know their stats)... and I personally prefer this version more ;).

Too-EZ Mac 'n Cheese by Hungry Girl
makes 4 servings
8 oz whole wheat pasta (we were lucky enough to find this cute Gobetti for 180cals for 2 oz)
1 steam bag green giant steamers broccoli in cheese sauce (any of the veggies in cheese sauce can be substituted if you prefer just cauliflower, or their cauliflower, broccoli and carrot mix)
4 wedges light swiss laughing cow

Bring a pot of water to a boil.  Add the pasta, and begin microwaving the broccoli and cheese in the microwave according to the directions.  Once the pasta is done, drain and put back in the pot.  Stir in the laughing cow wedges and the cheesy broccoli.  Stir until it all gets melty and delicious.

That is seriously it.  It is so simple, and yet so delicious and the serving size is much larger than even a box of macaroni.  I also love that we usually have all of these ingredients on hand and therefore can make it whenever we are in a cheesy mood!
