Ki and I love breakfast, and a couple of weekends ago I thought it would be fun to be able to eat breakfast for EVERY meal. So on a Saturday and Sunday, we were able to make not merely two breakfasts, but SIX! It was a lot to handle, and I am not sure if it is the best thing to do all of the time, but at least we have multiple recipes to share with you guys for breakfasts, brunches, or anytime you want breakfast for dinner.
Below are different variations that can be made to Fiber One Pancake Mix. It is amazing how many possible additions there are for one product to make it change dramatically. So whatever you're craving, and no matter what you have on hand, delicious things can happen ;). And no, not all of these options were consumed on one weekend, we had a few egg dishes as well but that's another post.
Step 1
Mix together the pancake mix and water according to the directions on the back of the box. Depending on the recipe, additional water might have to be added to make the desired consistency. Also, let the batter rest for about 5 minutes before putting them on the griddle to help keep them nice and fluffy!
Step 2
Choose your favorite additions
Lemon Poppyseed 1 t poppyseeds 1/2 t lemon extract |
Zucchini Chocolate Chip 1/3 c shredded zucchini 1/2 T mini chocolate chips 1/4 t cinnamon |
Bacon! 1-2 pieces oscar mayer pre-cooked bacon (70cals for 4 of them) |
Carrot Cake 1/4 cup shredded carrots 1 T crushed pineapple, drained 1 T oatmeal 1/4 t cinnamon optional: raisins |

Step 3
Either scoop on a pancake griddle, or a waffle iron if you so choose! Serve any of these with sugar free maple syrup :).
